Actually such strategy makes your opponent's side deck become useless.
Opponent can hardly side in anything to go against you, because you just have 1 card of each and it is no good to side 3 cards for playing against just a single card.

Without side deck, it is just a simple 3-single game

There must not have been any GBeast decks at this tournament because fort this type of tournament it would have been the perfect decktype.

Side decks aren't used to counter one type of card. They are used to counter a specific strategy or deck. The obvious card to side against this deck is shadow imprisoning mirror which defeats the purpose of your statement.
